sweet treat: s'more cupcakes

Did I mention that I've been doing Weight Watchers for the past two and a half weeks?  It works.  Apparently eating ice cream every single night is not a great way to lose baby weight.  Who knew? I'm over halfway to my goal weight since I've started it and my milk supply (because I know all you out there are so interested in my milk supply...ahem) hasn't decreased at all.

These cupcakes are not Weight Watchers approved.  I took their recipe for vanilla cupcakes and then bastardized it to use up leftover marshmallow and graham crackers I had on hand.  Also we had guests over the night I made these and I felt guilty about subjecting people other than Leif to a completely Weight Watchers inspired meal.  





At this point I realized that guests were coming over in less than fifteen minutes and there were still numerous dust and hair bunnies (ewww...gross, I know) scurrying all over the hardwood floors that needed to be rounded up.  So I crushed all the graham crackers and threw them on top of the muffin tin in the hopes that most of it would stick to the marshmallow cream.


Success!  Albeit a very messy success.  I had a bite of Leif's and all in all it was pretty tasty.  
I'd make it again with a few modifications.


For the vanilla cupcake:

1 1/2 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
1/8 tsp salt
1/4 cup butter, melted
1/3 cup sugar
2 large eggs
1 cup fat-free vanilla yogurt
1/4 cup fat-free milk

Sift together the flour, baking powder, baking soda, and salt.  Cream butter, sugar, and vanilla together.  Add eggs and yogurt and mix until well-blended.  Add the dry ingredients and the milk.  Mix until combined.  Spoon batter into lined muffin tin and back at 350 for about 20 minutes.

For the topping:

Melt the chocolate and the marshmallows over a double boiler (I just put a ceramic mixing bowl on top of a pan full of boiling water).  Chocolate goes on top of the cupcake.  Then the marshmallow cream.  Then the crushed graham crackers.

Learn from my mistakes:

The cake turned out a little dry.  Next time I would add some applesauce
to the batter.  
Also, the directions for melting the chocolate said to add some water
to the chocolate once it was all melted and whisk it together.
This was a bad idea.  It immediately solidified the chocolate
making it less of a glaze and more of a stiff frosting.

  1. For what it's worth, they were AWESOME. Stella asked for one yesterday and I told her she could have just a bite. Last night she asked me if she could have a bite this morning if she slept through the night. It's 7:50am and I never had to venture into her room last night. Girl is getting a bite any minute now.     1. Bribing is an awesome tool. I plan to use it on Clio too when she's old enough to understand. Glad you liked them. It's amazing what chocolate, graham crackers and marshmallows can do.
      That reminds me. We should all go camping some time. But the nice kind with bathrooms and cabins. Wait, that's not camping. That's just sleeping in a cabin in the woods. My kind of camping.

  2. In regards to the Lief made calendar at the top, I must say that I'm greatly relieved that you started the week with a Monday and not a Sunday.

    Who are these calendar makers that start the week with Sunday? It's ludicrous.

  3. About Superheroes:

    They thrift and craft and sew and cook and (oh my goodness, I so love that cookie post where you are trying the new dough and it doesn't work and you eat them anyway even though they are flat as pancakes and the picture where you are jumping for joy...yee haw) and sport squirrels on their walls and organize and decorate and think they look bad in a swimsuit when I don't agree and have jolly husbands with mad skills.

    There are lots of other remarkable things they do.

    For instance:

    CLIO. How are there any words to talk about this little peach of a person and her darling little ways and that smile and those eyes and, shoot, all of it.

    You know where Clio came from.

    Which brings me to George,

    who also, in - seriously I don't have the words - life and death, brings out the astonishing in his mother

    and I hope she never shuts up.

    On top of it all, this marvel listens to CDs and doesn't do FB or Twitter. (Tell me this isn't the way the world should be.)

    1. Cathy you know all the right things to say to make a girl blush. Remember my wacky squirrels (would you believe they haven't found s home yet in this apartment) and my cookie fiasco...well I'm all a flutter.
      I meant all that stuff I said about you on Kate's blog. You are something special. Your insights are always thoughful and intelligent. I really wish you had your own blog. Or a newsletter "Cathy's Missouri Musing." Totally would be all over that.

  4. Oh my gosh was just going to post about the yumminess of just the picture but then I read what Cathy said. And well I have to say, she nailed it right on the head. So there you go, a superhero with some groupies ;)

    I loved weight watchers for a few weeks but man it got hard to resist the extra points. I can't wait to see how it goes. Keep the willpower turned up high. ;)

    1. Thanks Paiula:). I don't know about groupies but I do know I have a lot of friends on these here internets, including yourself. Wish we had all met in ways other than how we did though. I probably say that too often.
